Butter Chicken: The icon of Indian Cuisine

They were feeding the refugees, but they almost ran out of tandoori chicken (another famous Indian dish) so to be able to feed all the refugees they improvised and mixed tandoori chicken with a rich and creamy tomato, butter, and cream-based curry which was named Murg Makhani and now it is known as Butter Chicken. The birthplace of this iconic mouth-watering dish in Delhi, the capital of India and all over the world it is used as filling in roti, in Australia and New Zealand it is seen as a filling in pies, and in other parts of the world it is also used as topping on pizzas but traditionally this rich and buttery dish is paired with Butter naan or rice.

To create this delicious dish first chicken pieces are marinated in dahi (yogurt), lemon juice, salt, garam masala, Kashmiri red chili, and ginger garlic paste for several hours so that all these flavors seep into the chicken so that there is a burst of flavors at every bite we take. Once marinated this chicken is cooked in a tandoor which is a clay oven but alternatively, one can grill, roast, or pan-fry the chicken. Now the work on the rich and creamy gravy starts, first tomato, ginger, and garlic are cooked for 10-15 mins such that all the water has evaporated, this sauce is then blended and sieved to create a rich and velvety gravy. Different spices according to the variation of the recipe followed are added such as cardamom, fenugreek, coriander powder etc. Once the gravy is ready the cooked chicken is added to it and left to simmer for a few minutes so that it combines and forms a dish that is rich in flavor and texture. The cream is also added in the end as garnish. Some variations of this dish include Cashew paste that adds flavor and thickens the sauce. At last, one thing that is compulsory in almost all Indian dishes is added, coriander is put on top of the dish as garnish and is the showstopper.
